Message rust and it always stays shiny. Just hit it once in a while with mothers when you clean your engine and it is tits. Far superior to aluminum in terms of maintenance. Sure, the stainless will hold a little more heat, but its smooth inside and there is very very little transfer from the metal to the air flowing through them (as a result of them being smooth). The material is more robust than aluminum and if you weld any bosses to them for N2O or water injection, you wont have to worry about them flexing at all.

In the end, the difference in temperature that you are pointing out is negligible. There simply is not as much heat transfer as you are thinking.. I'd be willing to say that 1 degree of atmospheric temperature difference would be more noticable than the difference between aluminum or stainless steel hardpipes.
